Lite meal for a romantic picnic?

First date tonight with a woman I have met at a few parties. Am planning a hike along a nice little stream that ends with a wonderful view of a waterfall. She has told me that she likes to eat healthy, but cannot think of anything to bring. Does anyone have any idea?

Loosely - some bread, cheese, pieces of veggie, some fresh fruit. Oh a little bottle of wine or champagne would be good too.

Ideally, it will all be finger food or bite-sized pieces - something you can kind of graze through. Anyway, the idea is bread, cheese, veggies, and fruit. If you really need to, you could add some cold meats sliced and rolled up on a toothpick, like ham, turkey, or roast beef...

Forget salad dressing, fork and knife, big chunks of leafy greens or anything else that's too much mess or work.

Maybe you could bring a mini-cheese cake for dessert, and a thermos of coffee.

Fruits, nuts, and some wine and cheese, I think, would set the mood you want and also be healthy in nature. Pick a red wine. From what I understand, they are healthier and less fattening than white wines. Have a good time.

Pita sandwich (chicken salad, or turkey). With some kind of veggies and dip or a nice tossed salad. Hope your date is awesome!

Here is a recipe, but you should probably only use half, and you could use FF mayo or Reduced fat mayo instead.

INGREDIENTS

6 boneless chicken breast halves, cooked and diced

1 cup chopped celery

1 teaspoon garlic powder

salt and pepper to taste

1 cup mayonnaise

DIRECTIONS

Combine the chicken, celery, spice blend and mayonnaise. Mix all together; more or less mayonnaise can be added, depending on your preference. Stuff into pita. Voila, your summer salad is ready to serve!

simple lite sandwhichs, fruit wedges/salad or vege salad, healthy pasta salad, bottled water/ tea/ lemonade.

hummus spread (chick pea dip, comes in all kinds of flavors) with pita wedges, fresh fruit is always nice (strawberries or something).

Cheese (not prepackages American) crackers and wine are always a good choice.

Has she mentioned any foods before? if so, try to find that, you will know she likes it and she will be impressed you remembered.

If not, use above mentioned foods. Good luck!

Try finger sandwiches cut into little triangles: egg salad, tuna or chicken salad, and cucumber sandwiches are decent suggestions. Also, try a cheese and vegetable tray with fat free dressing or a vinegarette dip and crackers. for desert, get a fruit salad in a bowl.

There are many healthy salad to choose from

Just care a small soft side cooler and you have it made.

Grilled Chicken Salad with Bleu Cheese and Raspberry-Walnut Vinaigrette

8 ounces precooked chicken strips

1 bag salad mix (without dressing)

1 can mandarin orange sections, drained

4 T. walnuts

1 C. crumbled bleu cheese

1 small red onion, sliced

1/2 C. bottled light raspberry-walnut vinaigrette

Place salad mix in a large bowl. Top with remaining ingredients.

Toss with dressing.

Makes 4 servings

Tyson makes a precooked roasted chicken which is delicious. Take the chicken, some assorted cheese cubes, some grapes, apples, pears (etc. ) and some whole grain croissants, and a bottle of wine. All of this can be purchased at Walmart. Don't forget some wet wipes. Good luck.
